Cedar nuts contain approximately 55% of valuable unsaturated fatty acids, particularly linoleic and alpha-linolenic acid, as well as the rare pinoleic/pinolenic acid. They are rich in tocopherols (vitamin E) as antioxidants and high-quality proteins (approx. 17%).
